Til Peanut And Jaggery Chikki (Peanut Sesame Seeds and Jaggery Brittle Bar)
I loved this combination of chikki/brittle bar and everybody whoever tasted it enjoyed having it. This is again very simple recipe using jaggery syrup, We keep preparing this at home throughout the year as there is no harm in consuming it as it has less quantity of til/sesame seeds. Sesame seeds having warm property and consuming them in summer cam harm. So to savor this sweet I needed them in moderation. So without any further delay let us look at the recipe detail.
Yields 12-16 pieces
2 Cup peanut
1 + 1/2 Cup Jaggery
1/2 Cup til/sesame seed
1/4 Cup chopped almonds
1/4 Cup grated coconut
1 Tsp cardamom powder
1 Tsp ghee/clarified butter
2 Tblsp water
Method: 1) Dry roast the peanut in a pan. Let them cool down and get their skin off.
2) Dry roast the til/sesame seeds. This takes only 2-3 min, roasting more than this will make seeds brown in color.
3) Grease a plate or tray and keep it ready.
4) Take water, ghee, and jaggery in heavy bottom pan/wok and heat on medium flame. jaggery will start melting and bubbling. Keep stirring it on medium heat. Drop a little quantity in normal water and check if jaggery syrup is hardening. If not then heat 1-2 min more.
5) If it hardens than add chopped almonds, cardamom powder, til/sesame seeds and peanut.
6) Mix well and pour on the greased plate/tray.
7) Flatten it with the help of a greased rolling pin.
8) Let it cool down and cut them in square or rectangle pieces.
Serve these healthy nut bar til, peanut and jaggery chikki to your guest on the occasion of Makar Sankranti.
Note: Jaggery syrup should be checked in water before adding rest of the ingredients. That is my entry for BM #84 Week #3 Day #3
