Gobhi Paratha | Stuffed Cauliflower Flatbread | Breakfast From Uttar Pradesh

Stuffed parathas/flatbread are a specialty in north India. It is one of the breakfast items which cooked more than once in a week in UP with different fillings. Stuffed parathas/flatbread are served with curd or raita or pickle and dollop of butter on top of it. Parathas/flatbread are named based on their stuffing, like if potato filled than aloo paratha, grated cauliflower than called as gobhi paratha.

Gobhi paratha/stuffed cauliflower flatbread is always been my favorite paratha. Served with cucumber raita and butter is enough for me to reach heaven. In pregnancy, I craved for this paratha/flatbread like crazy (in the morning 5AM cooked myself). I can have them in all three times meals. Just love them. I cook in two ways, first cook cauliflower with spices and then stuff. Second grate it, rinse water and then mix spices n stuff. Here I am showing the second way.


Stuffed cauliflower flatbread

Ingredients: Yield for four people

For Dough
2.5 Cup wheat flour
1/2 tsp salt
Warm water

For Stuffing
1 Head cauliflower
1 Tsp carom seeds
1 Tsp garam masala
1 Medium size onion chopped finely(optional)
1 Tsp grated ginger
Salt as per taste
1 Green chili finely chopped (optional)
1 Tsp red chili powder
Green coriander chopped finely as per your choice
Oil for cooking

Method: Mix everything from dough making list and knead well. Keep aside with covering lid. This will make dough very smooth.

Clean and cut cauliflower florets. Soak them in turmeric and salt water for 15 min. This kills all germs in it and if any insect is inside florets that come out doing this. It is a very important part for me whenever I am making anything with cauliflower. 
After 15 min rinses water and grates all florets.Add 1 tsp salt, mixing well and keep aside for another 15 min. This will take out all water content from florets.

Squeezed the water and keep it in mixing bowl.
Mix all spices in the rinsed cauliflower and mix well. Now stuffing is ready to be filled. 9-10 parathas/flatbread can be made with this dough quantity. Depends on the size you wanna make. Divide dough and stuffing into equal parts. Roll out a circle of about 3" in diameter. Place stuffing as per your choice and close it. Roll this around 6-8" diameter circle.

Heat a griddle and cook this paratha/flatbread from both sides until brown in color. Repeat the same with other dough balls. 

Now gobhi paratha/stuffed cauliflower flatbread is ready to eat :), serve with curd, pickle or any chutney you like.

Really am loving it :). Sometimes it feels blogging makes me crazy for just eating and only eating.

Note 1) Adjust chilies as per your taste. I made it optional as per my son's taste.
2) Rinse properly else it will be difficult to stuff and roll out.
3) Wash carefully, while grating sometimes I found insects coming out from florets.
