Carrot is a root vegetable and very rich in vitamins and mineral. A great antioxidant, reduces heart problems and good for eyes. You can read more about carrots here.
I am using carrots in many different forms these days like in raita, paratha/flatbread, mixing with other veggies, salads, soups, in dal/lentil and halwa/pudding. Sometimes I take them in juice form as well. But as of now my kids not liking juice. Well here I made gajer ka raita/carrots in yoghurt dip. Must say my son and daughter loved eating it with stuffed paratha/flatbread. Look at the recipe if you wanna make it too.

Ingredients: Sufficient for four people (2 adults & 2 kids)
1 Cup thick yoghurt/curd
1 Cup grated carrot
1/2 Cup water
Salt as per taste
For Tempering
1 Tsp Oil
6-8 curry leaves
1/4 Cup peanut
2 pinches of mustard seeds
Method: Mix curd/yoghurt, water and grated carrot/gajer. Adjust salt as per your taste. You do not need to add water if you like very thick consistency. I felt like mixing about 1/2 cup water.

Prepare tempering in a tadka pan. Heat oil in a pan and add mustard seeds. After they crackle add curry leaves and peanuts. Fry for few mins like for about 2-3 min till peanuts gets crunchy look. Add it on the mix which you prepared with carrot/gajer and curd/yoghurt. Mix well and raita/dip is ready to serve with your normal food items. It is a great accompaniment for parathas/flatbread too.
