Gond ke laddu/balls - Laddus/Balls Made Of Edible Gum

Gaund is an edible gum. You first need to deep-fry the crystals till they fluff up and then powder them before use in recipes. Gaund is a heat-giving food that is why it is best to consume in winters. This traditional sweet is best to consume with a warm glass of milk or can be eaten as a dessert. It is given to ladies who just give birth, mixing with dry ginger & few herbs due to healing properties of ingredients it contains. These are made mixing in wheat n gram flour with dry fruits along. 

I keep making them now for my kids as both of them loves eating it. For me a good start for the day or post workout meal with milk.



Ingredients: Sufficient For making 20 laddus

1 Cup whole wheat flour
1 Cup gram laddu flour
¾ Cup edible gum
3 Tblsp cashews finely chopped
3 Tblsp almonds finely chopped
3 Tblsp pistachios finely chopped
1 Tsp cardamom powder
10-12 Saffron threads (optional)
¾ Cup sugar
¾ Cup clarified butter + more to fry edible gum
2 Tblsp raisins



Method: Soak saffron threads in 1 tblsp milk and keep aside. 

Deep fry edible gum into ghee/clarified butter. When you add edible gum in the butter it will start puffing and white in color. Be careful when you do this because it splutters sometimes like cumin seeds. Grind it into mixer and make powder.

Sift the wheat and besan/gram laddu flour. Take a heavy bottom pan and dry roast the flour on medium flame. Don’t burn it, just that the raw smell of flour should disappear. It will become a little brown in color, to this add saffron threads and stir it for few more min. Now take off the pan and take out the flour.



Heat the clarified butter/ghee in the same pan on low flame and add edible gum powder. To this add all dry fruits and cardamom powder and stir 1-2 min. All should be done on low flame otherwise it will burn easily. Now switch off the stove and add roasted flour. Mix well and let it cool for few min. Add sugar to this mixture and mix well. Take care when you mix sugar, if mixture will be very hot then sugar will start melting. So let it cool for sometime. If mixture is very dry add a little more ghee/clarified butter. Make small balls and decorate with pistachio. Have this one laddu/ball everyday. Very healthy in winters.
