I am in love with these veggies, bottlegourd, ridgegourd, bittergourd. Can have in any form. Often I do search for them to make differently. Even a slight change in cooking gives you different result. This curry I cooked with boiled bottlegourd/lauki/doodhi. Bottlegourd is very healthy and rich in minerals and helps in weighloss too. Jumping directly to the recipe.

| lauki ki sabji | 
Ingredient: Sufficient for 4 people
1 medium size bottlegourd chopped 
2 medium size onion chopped
1 chopped tomato
1 green chilli
1 Tsp ginger garlic paste
1 Tsp garam masala
1 Tsp turmeric
1 Tsp cumin powder
1 Tsp chilli powder
a pinch of asafoetida
1.5 Cup water
Salt as per taste
Oil for cooking
Green coriander chopped finely

| Bottlegourd curry | 
Method: Boil the chopped bottlegourd/doodhi/lauki with chopped tomatoes with 2.5 cups of water. You can reduce the water quantity if it becomes too watery. 4-5 whistles are enough to cook them nicely. Let it sit for sometime till pressure goes down.
Prepare for tempering meanwhile. Heat oil in a pan, add cumin seeds. Once cumin seeds starts splattering add ginger garlic paste. Fry this untill raw smell of garlic goes away. Add chopped onion and fry them till they become golden brown. Now add all dry spices listed one by one, mix well. Add the bolied bottlegourd/doodhi/lauki and cook for another 5-6 min. Garnish it with green chopped coriander and server with chapati... fabulous taste.
