Yes, I made this pumpkin soup yesterday specially for myself. Usually, I make it by adding bottle gourd but this time added tomato to get the different taste. I make it a bit watery, instead of thick soup. This is a great vegetable with loads of health benefits. It makes our heart healthy by lowering cholesterol, boost vision and contains fiber. It helps in weight- loss process too.
I use its seeds as well in my regular fooding. Let's have a look at the points how I cooked it.
Ingredients: Sufficient for four people
1/2 Kg pumpkin 6-8 garlic pods 1 Medium size onion roughly chopped 1 Big tomato roughly chopped Salt as per taste 2 Cup water 2 Tblsp fresh cream mixed seasoning (optional) 1 Tsp oil for cooking
Method: Peel the pumpkin and chop it into small pieces. Pressure cook pumpkin, garlic pods, onion and tomato with 2 cups of water.
Let the cooker releases and mixture gets cool down. Grind it to the puree. Heat oil in a pan, add salt and seasoning. To this pour the puree and cook it to boil. I added 1/2 cup extra water to this puree as I like to have a bit watery. Switch off the flame, adjust salt as per your taste and garnish it with cream. Serve hot. Very soothing...
Note 1) Adjust thickness as per your choice. I like to have a bit watery so added extra water as well. 2) Seasoning is completely optional. 3) If you do not like onion you can add bottlegourd. the taste will be great.
