Gujarati Snack Lauki Nu Muthia Recipe | How To Make Doodhi Na Muthia | Healthy And Steamed Bottlegourd Dumplings (Lauki Ki Muthia)

Lauki Nu Muthia or lauki muthia is a popular Gujarati tea time snack, which is less oil but very tasty and nutritious. Muthi means fist, this snack is named as muthia because we have to shape them in a cylindrical shape with the help of fist. This is a very healthy snack as it is steamed. You can make them fry as well if needed.


How to make lauki nu muthiya, a Gujarati Snack

Lauki ki muthia is a great kid-friendly snack too. Just pack in their lunchbox with ketchup and they all set. This lauki muthia I added the same quantity of cabbage as well. With lauki/bottle gourd and cabbage one thing to remember, they contain a lot of water which is sufficient to combine the flour and rest of the ingredients. No need for adding extra water.

Ingredient Yields 4-6 Servings

1 Cup lauki/bottle gourd grated
1 Cup cabbage grated
1/2 Cup jwar flour
1 Cup whole wheat flour
1/2 Cup sooji
1/2 Cup besan/gram flour
6 Garlic pods grated
2 Green chili 
1 Tsp carrom seeds
1 Tsp coriander powder
1 Tsp turmeric powder
1 Tsp sesame seeds
1 Tsp amchur/dry mango powder OR 1 lemon juice
Salt as per taste
2 Tsp oil
1/2 Tsp asafoetida
1 Tsp grated ginger
1/2 Cup curd/yogurt

Tempering

1 Tsp oil
1 Tsp mustard seeds
1 Tsp sesame seeds
1 sprig of curry leaves

Method: 1) In a mixing bowl combine all ingredients together and make a dough. If you find it little dry use water to make a soft dough, else no need. 

2) Rub oil on your pals and divide dough in equal proportions, shape them into a cylindrical shape.
3) Grease the steamer plates and steam these cylinders for 15-20 min. Steam until a toothpick comes out clean.
4) After 20 min removes them from steamer and cools them completely. Cut these into small pieces.


5) Heat a heavy bottom pan and prepare to temper, mix all cut pieces into the pan and mix well.
Serve hot with green coriander chutney and enjoy.

Note Adding water is the main precaution here.
