How to Prepare Crispy Spicy And Savory Besan Sev Numkeen At Home | Besan Sev A Festival Recipe

Besan sev is a blend of besan/gram flour and many spices, which are deep fried to cook. They are crisp and savory in taste and a great tea time snack. This snack is made during Holi or Diwali, though you can cook throughout the year. At my home, my parents used to make this only in Holi. It has been my favorite since childhood.

Kids love these, so now it is a snack item for my son in his school's tiffin box. They can be stored in airtight containers since they are deep fried so their shelf life is good. Here is my version of making these.

Ingredients To Make Besan Sev

2 Cup Besan/gram flour
1/2 Cup rice flour (optional)
1 Tsp carrom seeds
1/2 Tsp turmeric powder
1/2 Tsp baking soda
1/4 Tsp Black pepper/white pepper
2 Pinch asafoetida
1 and 1/2 Salt or as per your taste
3 Tblsp warm oil
1 Cup water to knead
Oil for deep frying

Method: Using rice flour makes them a little softer as compare to using besan/gram flour alone. Having besan alone makes them very crisp to bite. Quantity mentioned for the salt was good enough for me and used exactly 1 cup of water to knead.

Mix all the ingredients mentioned and form a dough using water. Keep it aside for 15 mins. To make sev you need chakli maker which is easily available in vessels shops or online like Amazon.

You can use any mold as per your choice with this dough, as I do not find much difference for other besan/gram flour. I used the one with many small holes. Grease the mold from inside and fill it with the dough. It has to move round n round in circle and sev will start coming out of the mold. Deep fry them.

When they turn golden brown take them out on tissue paper, it will soak extra oil. Let them cool and then keep in airtight container. Your tea time snack partner besan sev is ready to serve.
